LEMON-GLAZED ZUCCHINI BREAD

INGREDIENTS

Zucchini Bread

  • 2­¼ cups all-purpose flour
  • ½ teaspoon kosher salt
  • 2 teaspoons baking powder
  • 2 eggs
  • ¼ cup canola oil
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • ½ cup buttermilk
  • 2 cups shredded zucchini

Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon milk

DIRECTIONS

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9-inch-by-5-inch loaf pan and set aside.
  2. In a medium bowl, mix together the flour, salt, and baking powder. Set aside.
  3. In a large bowl, beat the eggs. Add the oil and sugar, and mix until well-blended.
  4. Add the lemon juice, zest, and buttermilk, stirring until well-combined. Fold in the zucchini.
  5. Add the dry mix to the wet mix, and stir until just combined.
  6. Pour the batter into the prepared loaf pan. Bake for 60 minutes, until browned and a knife inserted in the center comes out clean.
  7. In a small bowl, whisk together the ingredients for the glaze until smooth.
  8. Remove the bread from the loaf pan and while still warm, pour the glaze over top of the bread. Allow the glaze time to set up before cutting and serving.
