You’ll Need

Roast Salmon with Broccoli and Cauliflower
– 1 tablespoon olive oil
– 1 lemon, juiced
– 1/2 teaspoon red pepper flakes
– 1/2 teaspoon garlic powder
– 2 cups broccoli florets
– 2 cups cauliflower florets
– 2 to 4 salmon fillets
– Salt and pepper
Chicken Fajitas
– 1 red bell pepper, thinly sliced
– 1 orange bell pepper, thinly sliced
– 1 small red onion, thinly sliced
– 2 chicken breasts, thinly sliced
– 1/2 jalapeño, thinly sliced
– 1 tablespoon olive oil
– 1 tablespoon chili powder
– 1/2 teaspoon garlic powder
– 1 lime, juiced
Halibut with Potatoes, Tomatoes, Olives and Green Beans
– 1 tablespoon olive oil
– 1/2 teaspoon garlic powder
– 3 cups baby potatoes, washed
– 1 cup cherry tomatoes
– 1/2 cup Kalamata olives, pitted
– 1 pound green beans, trimmed
– 1 to 2 tablespoons capers
– Three 4 to 6 ounce halibut fillets
– Salt and pepper

How To

Roast Salmon with Broccoli and Cauliflower

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Arrange the broccoli and cauliflower florets on a sheet pan, and season with the olive oil, garlic, chili flakes, lemon juice, salt and pepper.
  3. Bake for 8 to 10 minutes.
  4. Remove the sheet pan from the oven and arrange the salmon fillets in the center of the pan. Season the salmon with olive oil, garlic, chili flakes, lemon juice, salt and pepper.
  5. Bake for an additional 10 to 15 minutes, or until the salmon is cooked to your liking.

Chicken Fajitas

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Arrange the bell pepper, red onion, chicken breast strips and sliced jalapenos on a sheet pan.
  3. Season with olive oil, chili powder, garlic powder and fresh lime juice. Toss so everything is evenly coated.
  4. Bake for approximately 30 minutes, or until the chicken is cooked through.
  5. Serve with tortillas, salsa, sour cream and shredded cheddar cheese.

Halibut with Potatoes, Tomatoes, Olives and Green Beans

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, salt and pepper.
  3. Pour the potatoes onto a sheet pan and bake for 15 to 20 minutes, or until they start to brown.
  4. Remove the potatoes from the oven and add the green beans, tomatoes, olives and capers.
  5. Arrange the halibut fillets in the center of the sheet pan, and season everything with olive oil, salt and pepper.
  6. Bake for another 10 to 20 minutes, or until the halibut fillets are cooked through.
