There’s something so comforting about pancakes, isn’t there? And what’s more comforting than pancakes in the middle of a pandemic when you’re quarantined at home? That’s right—nothing.
If pancakes have been your breakfast of choice during this strange time, you’re not alone. Many people associated the classic breakfast food with comfort, plus they’re super satisfying, delicious, and are versatile as heck.
Like the rest of us, Chef Gemma Stafford of Bigger Bolder Baking and her family are huge fans of pancakes. She recently filmed an episode of her YouTube baking series, which specializes in easy baking recipes, on how to make delicious pancakes.
What’s so special about that? Well, first of all, she involves her whole family—her husband, Kevin, and cute little baby son, George—and everyone is hanging out in their pajamas. It’s pretty relatable since they probably look just like you do right about now (or on a Sunday morning for sure).
Additionally, the recipe for the pancakes that she uses doesn’t involve any flour, a hard-to-find ingredient in amid the pandemic. Instead, she uses oats that she grinds into oat flour, making the pancakes just as fluffy as your flour-filled version.
You can use rolled oats or quick-cooking oats, just make sure not to use steel-cut oats, since they take longer to cook and they’ll make your pancakes more chewy and hard (and no one wants a chewy, hard pancake!).
The recipe calls for just a few more ingredients after that, which she refers to as cupboard staples: bananas, eggs, butter, baking powder, vanilla extract, and salt. That’s it!
As you can see, the recipe is not only delicious but healthy to boot—perfect if you’ve been pigging out a bit more than usual during so much time at home (we know we have!).
After mixing all the dry ingredients, all you do to make these pancakes is mash the bananas in a separate bowl, adding in your eggs and the vanilla extract.
Gemma says you can leave the vanilla extract out if you don’t have it, and if you don’t eat eggs, you can substitute them for a flax or chia egg options. You can even replace the bananas if you’d like—with apple sauce, fruit puree or pumpkin puree. See what we mean about the recipe being versatile?
Once everything is mixed, combine the dry into the wet ingredients, and then add your melted butter at the end. Scoop ‘em onto the pan and cook them like you do any other pancakes, and voila!
