You know those little frosted cake treats you can find at coffee shops? That’s what this cake reminds me of. Using this recipe from Chef in Training, you can make a yummy sheet cake to cut up and serve with coffee or hot cocoa (or just on it’s own for dessert, of course).
Here’s what you need:
-1 cup butter, softened
-2 1/2 cups brown sugar
-3 eggs
-3 cups grated carrots
-1/2 cup sour cream
-1 tsp vanilla
-1 tsp cinnamon
-3 1/2 cups flour
-4 tsp baking powder
-1/2 tsp salt
For the cream cheese frosting:
-8 oz. softened cream cheese
-1/4 cup butter, softened
-3 cups powdered sugar
-1 tsp vanilla
-1/4 cup milk
And here’s what you do:
Preheat your oven to 350 degrees. Cream the butter and brown sugar together, then beat in your eggs and sour cream. Mix in the carrots and vanilla. Then add flour, cinnamon, baking powder, and salt. Mix well until all combines. Pour this mixture into a greased 13X18 inch cookie sheet. Bake for 30-35 minutes.
To make the frosting, cream butter and cream cheese together. Beat in the powdered sugar, vanilla and milk. Spread this over your cooled cake. The sprinkle the top with whatever garnish you like (nutmeg or cinnamon work well)!
