Summertime desserts call for lighter sweet treats than the ones we eat in the cold months. That means out with the heavy cakes and pies, and in with the fruit! One of our new favorite ways to eat them? Spring rolls! This take on the treat is coming to us from Gemma’s Bigger Bolder Baking, and she’s giving the fruity combos her own unique twist that keeps things simple, but totally delicious. Check them out!
One of the best things about these summer fruit spring rolls is that you can make them with any of your favorite fruits. If you want to make them exactly how Gemma makes them . . .
You’ll Need
– 8 strawberries
– ½ cantaloupe melon
– 1 peach
– 1 mango
– 1 apple
– 1 lemon
– Bunch of mint
– 8 rice paper wraps
Dipping Sauce
– ¼ cup honey or agave
– Zest and juice of 1 lime (about 2 tablespoons)
– 3 tablespoons water, to thin out sauce, if needed
