We never need an excuse to eat bacon, so when a recipe comes along that incorporates it and keeps it relatively healthy, it feels like we’ve struck gold! This one comes to us from Mahalo, and it involves some of our other favorite ingredients, too. She calls it a “breakfast salad,” but we just call it delicious.
You’ll Need
– 4 cups baby spinach
– 2 hard-boiled eggs, chopped
– 4 slices cooked bacon, chopped
– 2 tablespoons red onion, chopped
– 4 mushrooms, sliced
– 2 tablespoons red wine vinegar
– 2 tablespoons bacon fat
– Chives
– 1/2 teaspoon Dijon mustard
– Salt
– Pepper
