If you’re like me, then you hated brussels sprouts as a kid but then discovered, as an adult, that they can actually be delicious, especially when roasted. We found a great recipe for brussels sprouts over on OhMyVeggies that we can’t wait to try this Thanksgiving. If you’re looking to convert brussels sprout haters, you’ll definitely want to give this recipe a try as well!
Here’s what you need:
-1 pound brussels sprouts, trimmed and halved lengthwise
-1 apple, cored and sliced
-1 tbsp. olive oil
-1/4 cup dried cranberries
-1/4 cup chopped walnuts
-1 tbsp maple syrup
-salt and pepper to taste
Here’s what you do:
- Preheat your oven to 400 degrees.
- Toss the brussels sprouts and apple slices with olive oil, salt, and pepper on a rimmed baking sheet.
- Bake for 25-30 minutes (or until sprouts are tender and browned on edges). Be sure to stir halfway through cooking time.
- Move brussels sprouts and apples to a large bowl. Than stir in cranberries, walnuts and maple syrup.
- Enjoy!
