Recipe for a Kickin’ Buffalo Chicken Casserole

We love casseroles in the winter. They’re filling, comforting, easy to make, and usually create a good amount of leftover to enjoy on another lazy winter evening. If you’re tired of your same old casseroles and you’re in the mood for a little bit of a kick, then you’ll definitely want to try this buffalo chicken casserole we found over at MyFridgeFood.

Here’s what you need:

-1 1/2 lb boneless skinless chicken breasts, cut into 1″ strips
-1/3 cup Frank’s hot sauce
-5 cups of potatoes, grated
-1 cup light ranch dressing
-1/2 cup cheddar cheese
-1 can condensed cream of chicken soup
-1/2 cup Panko breadcrumbs

Here’s how you do it:

  1. Preheat oven to 350 degrees. Grease a 9″x13″ baking pan with cooking spray.
  2. Grate your potatoes (or defrost frozen hash browns as an alternative). Pat with a paper towel to get rid of some of the moisture.
  3. Mix chicken strips and buffalo sauce together and layer in the bottom of the baking dish.
  4. Combine potatoes, dressing cheese and soup, and mix well. Pour over chicken.
  5. Sprinkle bread crumbs over the top of your casserole. Cover casserole with foil and bake for about 30 minutes.
  6. Uncover and bake for an additional 20-25 minutes, until potatoes are tender and chicken is fully cooked.
