Recipe for a Kickin’ Buffalo Chicken Casserole
We love casseroles in the winter. They’re filling, comforting, easy to make, and usually create a good amount of leftover to enjoy on another lazy winter evening. If you’re tired of your same old casseroles and you’re in the mood for a little bit of a kick, then you’ll definitely want to try this buffalo chicken casserole we found over at MyFridgeFood.
Here’s what you need:
-1 1/2 lb boneless skinless chicken breasts, cut into 1″ strips
-1/3 cup Frank’s hot sauce
-5 cups of potatoes, grated
-1 cup light ranch dressing
-1/2 cup cheddar cheese
-1 can condensed cream of chicken soup
-1/2 cup Panko breadcrumbs
Here’s how you do it:
- Preheat oven to 350 degrees. Grease a 9″x13″ baking pan with cooking spray.
- Grate your potatoes (or defrost frozen hash browns as an alternative). Pat with a paper towel to get rid of some of the moisture.
- Mix chicken strips and buffalo sauce together and layer in the bottom of the baking dish.
- Combine potatoes, dressing cheese and soup, and mix well. Pour over chicken.
- Sprinkle bread crumbs over the top of your casserole. Cover casserole with foil and bake for about 30 minutes.
- Uncover and bake for an additional 20-25 minutes, until potatoes are tender and chicken is fully cooked.
