These unsuspecting cookies look just like robust chocolate chip cookies. But when you bite into them, your life is changed forever. I started making these cookies at Christmas time a few years ago, and it’s become a popular tradition that my family looks forward to. And thank goodness these cookies are only made once a year because they are impossible not to devour.
To make these, you basically need to make chocolate chip cookie batter (with a few alterations) and form the dough around the Oreos to seal them. Here’s what you need for ingredients to make 18-24 cookies (thanks to Bakerella for the specifics):
-8 oz (2 sticks) unsalted butter, room temperature
-3/4 cup packed light brown sugar
-1 cup sugar
-2 large eggs
-1 Tbsp vanilla extract
-3 1/2 cups all-purpose flour
-1 tsp salt
-1 tsp baking soda
-10-12 oz bag semi-sweet chocolate chips
-1 pkg Double Stuf Oreo Cookies
And here’s what you do:
- Preheat your oven to 350 degrees. Line a large baking sheet with parchment paper.
- Add sugars and butters to the bowl of a stand mixer and beat until mixture is light and fluffy. Add in the eggs and vanilla and beat until well incorporated.
- In a separate large bowl, mix the flour, salt and baking soda with until combined. Then, a little at a time, slowly add the dry ingredients to the wet mixture and mix until combined. Add in chocolate chips and mix well.
- Using an ice cream scoop, place a scoop of cookie dough on top of an Oreo cookie, and add a scoop to the bottom as well. Then seal the Oreo completely inside the cookie dough by pressing with your hands. Repeat until you’ve run out of cookie dough.
- Place cookies on prepared baking sheet a couple of inches apart and bake for 11-15 minutes (until cookies are cooked through and edges are lightly browned). Let cool for 5 minutes, the transfer to a cooling rack.
