No Bake “Pick Me Up” Bites

No bake cranberry orange energy bites.

You might love to cook but even the most devout chef/homemaker/hungry person needs a quick boost of energy and flavor from time to time. When these moments happen you need this recipe on hand. Seriously, these nutritious little energy bites are packed full of protein, fiber, and flavor. But their real value lays in fighting off unnecessary hangry outbursts. You can whip up a quick batch in under 15 minutes or make them ahead and keep them in the freezer for some seriously instant gratification. And you know whats best of all? You don’t even need to turn on your oven for these. In fact, in the time it takes to read this post you could be chowing down on some filling, heart healthy Omega-3 rich treats.

Want to make this recipe but missing one or two ingredients? Fret not! Substitute raisins for the cranberries, almond butter for the peanut butter, etc. Add chocolate chips or change the spices, use up whatevers sitting in your cabinet already. Go wild and have fun!

Pick Me Up Bites:

1 cup oats

1/2 cup dried cranberries

1/2 cup smooth peanut butter

1/2 cup wheat bran

1 tsp orange extract

1/3 cup orange blossom honey

1 TBL chia seeds

1/3 cup ground flax seeds

1/2 tsp ground cinnamon

 

  1. Mix all of the ingredients together in a bowl using either a spatula or wooden spoon.
  2. Portion out into a dozen equal sized pieces
  3. Roll into balls, and enjoy!
