LEMON-GLAZED ZUCCHINI BREAD

INGREDIENTS
Zucchini Bread
- 2¼ cups all-purpose flour
- ½ teaspoon kosher salt
- 2 teaspoons baking powder
- 2 eggs
- ¼ cup canola oil
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- Zest of 1 lemon
- ½ cup buttermilk
- 2 cups shredded zucchini
Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk
DIRECTIONS
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9-inch-by-5-inch loaf pan and set aside.
- In a medium bowl, mix together the flour, salt, and baking powder. Set aside.
- In a large bowl, beat the eggs. Add the oil and sugar, and mix until well-blended.
- Add the lemon juice, zest, and buttermilk, stirring until well-combined. Fold in the zucchini.
- Add the dry mix to the wet mix, and stir until just combined.
- Pour the batter into the prepared loaf pan. Bake for 60 minutes, until browned and a knife inserted in the center comes out clean.
- In a small bowl, whisk together the ingredients for the glaze until smooth.
- Remove the bread from the loaf pan and while still warm, pour the glaze over top of the bread. Allow the glaze time to set up before cutting and serving.
