One of our favorite things about fall is, undoubtedly, the return of the pumpkin spice latte. The good news is that you don’t even have to spend $5 at Starbucks to get one! Here’s a great recipe from Instructables that shows you how to make it on your own whenever you need a happy little pick-me-up:
Here’s what you’ll need:
- 1 cup milk
- 2 tablespoons canned pumpkin
- 1 teaspoon sugar or sugar substitute
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 2 shots of expresso, or really strong coffee if you don’t have an espresso maker
Here’s what you do:
- If you’re using regular coffee, get it brewing. Make it double or triple strength.
- If you don’t have a frother, mix together the milk, pumpkin and sugar in a bowl and microwave for a minute or 2, stirring every 30 seconds. When the milk is heated, add in a teaspoon of pumpkin pie spice and a teaspoon of vanilla.
- Give this mixture a “good whirl” with a frother or immersion blender.
- Gently add coffee or espresso to the milk mixture.
- Dress your latte up with whatever you’d like. Try freshly whipped cream, a cinnamon stick, some fresh shaved nutmeg, etc.
