How to Make Your Own Almond Joy Candy Bars

If you’re a lover of candy, these weeks leading up to Halloween are like something out of a dream. If you’re a candy-lover on a diet, however, they can be a nightmare. You can always stay strong and abstain completely, but what if there were a happy medium that allowed you to indulge just once? You’ll Need

– 1 cup unsweetened coconut flakes
– 1 tablespoon honey (more or less to taste, or if the consistency needs it)
– 1 teaspoon stevia (more or less to taste)
– 1/4 teaspoon coconut oil
– 1/2 teaspoon vanilla extract
– Pinch of salt
– 10 almonds
– 2 1/2 ounces dark chocolate chips

How To

  1. In a food processor, combine the coconut, honey, stevia, coconut oil, vanilla and salt. Allow to run for 3 to 4 minutes, until a paste consistency forms. You should be able to form the coconut into small “bar” shapes with your hands. If the coconut won’t stay together, you may need to add a bit more honey.
  2. Form the coconut mixture into 10 candy bars.
  3. Place an almond on top of each bar.
  4. Freeze the bars for 20 minutes.
  5. Melt the dark chocolate chips by heating them in the microwave, 30 seconds at a time, stirring until they reach a smooth consistency.
  6. Dip and cover each candy bar with a light coating of chocolate. Remember to be delicate with the almond!
  7. Freeze for 10 to 15 minutes until firm, and store in the freezer up to one week until ready to eat. When you are ready to enjoy, allow them to sit at room temperature for 10 to 15 minutes.
