And even if you do some substitutions, you’re still going to enjoy a slab of cool ice cream in between two delicious chocolate brownies — yes, you heard us right, BROWNIES — and that’s hard to mess up.

Here’s what you’ll need to get started on this fun, yummy recipes:

Homemade Ice Cream Sandwiches

Ingredients

  • 2 cups (10oz/300g) all-purpose flour
  • 1 cup (4oz/120g) cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 11/3 cups (101/2oz/200g) granulated sugar
  • ½ cup (3oz/90g) chocolate, roughly chopped
  • 1 cup (8oz/240g) butter
  • 1.5 quarts (1.4 liters) vanilla ice cream, slightly softened for about 5-10 minutes (either homemade or store bought)

 

One of Gemma’s biggest recommendations for your homemade brownie mix (and ultimately, for the entire integrity of your ice cream sandwiches) is that you use good quality chocolate for melting and baking. She suggests 50%, 70%, or 72% for the best results.

Now, it’s obviously amazing watching the entire, hypnotizing baking process and the final result is literally mouth watering – but can we just talk about that giant ice cream sandwich?! Before cutting the sandwiches, the full sheet of ice cream between two pans of brownies creates one giant sandwich…and it is one of the most beautiful things we’ve ever seen.
