Holiday season is upon us and that means unexpected guests, house parties, office parties, and schedules stretched nearly to the breaking point. But it’s also a time for celebration and sweets. This fudge takes five minutes of active time and an hour in the fridge to make. You probably already have all of the ingredients you need for it in your pantry. Feel free to double the recipe if bringing this to any holiday gathering. They also make cute host/ess gifts. Pumpkin makes these seasonal and peanut butter makes them irresistible. It may sound like an odd combination but the sweetness of the white chocolate brings it all together. Trust me on this one, it works, really, really, really well. And it’s ready in less than 15 minutes of active time. (It does have to chill in the fridge but you can get a taste of it off the spoon, no judgement.)
1/4 cup smooth peanut butter
1/3 cup plus 2 Tablespoons pumpkin puree
1 teaspoon cinnamon
1 teaspoon vanilla extract
Plus peanut butter chips, chocolate sprinkles, caramel sauce, or crushed pretzels for garnish (optional)
- In a microwave safe vessel (a bowl of measuring glass) melt the white chocolate and peanut butter on half power, stirring every 30 seconds until they are both completely melted.
- While the peanut butter mixture is melting spray a glass container with some non stick spray. I used a small 4″x4″ glass dish. If you are doubling the recipe you will need a larger dish.
- Once the white chocolate and peanut butter are melted add in the pumpkin puree, cinnamon, and vanilla extract. Stir vigorously to combine all of the ingredients. Pour everything into the oiled dish. Sprinkle your toppings.
- Chill in the refrigerator for at least an hour before cutting and serving. The fudge gets too soft if left at room temperature so you will want to store them in the fridge. Freeze them if you have to travel with them.
