Cheesy Corn & Jalapeño Dip

Serves 6 Prep Time: 10 minutes Total Time: 40 minutes

Ingredients

  • ½ pound bacon, diced (reserve some for garnish)
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne powder
  • 1 jalapeño, minced
  • ¼ red Onion, cut into small pieces
  • 20 ounces frozen corn, thawed and divided
  • ¼ cup fresh chopped basil (reserve some for garnish)
  • The Snack Factory® Pretzel Crisps® Sea Salt & Cracked Pepper flavor works best with the cheesy corn!

Directions

  1. Preheat the oven to 400 degrees Fahrenheit (205 degrees Celsius).
  2. In an 8-inch oven-safe skillet over medium heat, cook the diced bacon until golden brown and crispy. Remove the bacon from the grease and drain on a paper towel. Reserve skillet for later use.
  3. In a medium bowl, blend together the cream cheese, mozzarella, garlic powder and cayenne powder. Add the jalapeño and red onion. Add roughly ¾ of the corn, cooked bacon and chopped basil, reserving the rest of each for garnish. Stir until fully mixed, then spread evenly into the reserved skillet.
  4. Bake for about 30 minutes, or until the cheese is melted and dip is bubbling on the edges.
  5. Garnish dip with the reserved corn, bacon, and basil. Serve immediately with your favorite Snack Factory® Pretzel Crisps®

Chef’s Tips

  • If you don’t have an 8-inch oven-safe skillet, you can also use a 9-inch or a 10-inch one. Just reduce the amount of time in the oven.
  • The warmer the softened cream cheese is to start, the easier the dip will be to blend together.

These four dips are a great way to serve a crowd from only one dish. Plus, we feel like dips should be at EVERY event, don’t you?
