I love meatballs but I love cheese-stuffed meatballs even better. These slow cooker meatballs are easy to make and you can just throw them in your slow cooker and set your timer and they’re ready to go. Check out the quick video below:

Ingredients:
1 pound ground beef
1 cup panko bread crumbs
1 egg, beaten
2 large garlic cloves, minced
2 Tbsp minced yellow onion
1 tablespoon Italian seasoning
1 teaspoon Kosher salt
½ teaspoon black pepper
1 Tbsp chopped fresh parsley
3 sticks mozzarella string cheese cut into 6 pieces each, or 3 oz cubed mozzarella
marinara sauce for dipping
Instructions:
1. Mix together the panko, egg, garlic, onion, Italian seasoning, salt, pepper and parsley in a large bowl.
2. Add in the ground beef and mix together with your hands until all of the ingredients are well blended.
3. Pinch off a golf-ball sized piece of the meatball mixture and roll into a ball. Flatten into a circle, then place one of the pieces of mozzarella in the middle of the circle. Wrap the meatball around the cheese to completely enclose it and roll into a ball again. Repeat with the remaining meat mixture; you should have enough for 12 meatballs.
4. Spray the inside of the crockpot with non-stick spray, then arrange the meatballs in a single layer. Cover with the lid and cook on the High setting for 2 hours or Low for 4-5 hours, until browned on the bottom and cooked through. Some of the cheese might leak out. Alternatively, bake in a 400 F oven for 20 minutes, until browned and cooked through. Makes 12 large mozzarella-stuffed meatballs.
