CHICKEN SALAD

INGREDIENTS
– 3 lbs. chicken breast
– 1 can chicken broth
– 1 cup celery
– 1/2 cup water chestnut
– 1/2 cup onion
– 1/2 cup red bell pepper
– 1/2 cup yellow bell pepper
– 3 cups mayonnaise
– 1 tsp. red pepper
– 1/2 tsp. salt
– 1/2 tsp. white pepper

DIRECTIONS

1. Place chicken in a pot and cover with chicken broth. Bring to a boil. Put heat to low and place the lid on the pot, letting simmer for about 30 minutes until the chicken is done.
2. Remove the chicken from pot and use a fork to shred it off the bone.
3. Combine shredded chicken, celery, onion, peppers, and water chestnut in a bowl.
4. Mix mayo with peppers and salt. Add this to the chicken mixture, stirring to combine.
5. Cover and let chill for 4 hours.
