Buffalo Chicken Stuffed Shells

  1. Heat a large sauté pan over medium­-high heat. Melt 1 tablespoon of the butter and sauté the onions until translucent.
  2. Add the ground chicken and cook until not pink anymore.
  3. Add the spinach and sauté until wilted.
  4. Season the chicken-and-spinach mixture with salt and pepper, then remove from the heat and allow to cool.
  5. Add the hot sauce and ricotta cheese to the chicken-and-spinach mixture, and stir until combined. Set aside.
  6. Bring a large pot of lightly-salted water to a boil. Add the pasta shells and cook for about 10 minutes. Pasta should be firm to the bite. Drain and rinse under cold water, then drain completely.
  7. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 13-inch-by-9-inch baking dish.
  8. Spoon the chicken-ricotta mixture into the cooked shells, and arrange in the prepared baking dish.
  9. Sprinkle the cheese blend over the shells.
  10. Bake for 15 to 20 minutes, until the filling is hot and the cheese is melted.
