Bacon Spinach Strata

Ingredients

  1. Heat a large sauté pan over medium-high heat.
  2. Add the bacon and cook until the fat has rendered.
  3. Add the onions and sauté until translucent.
  4. Add the spinach and cook until just wilted. Season with ½ teaspoon of the salt, ¼ teaspoon of the pepper, and the nutmeg. Allow to cool.
  5. Whisk the eggs, milk and remaining salt and pepper in a bowl.
  6. Place half of the bread into a gallon-sized Ziploc bag. Add 1-½ cups of the cheese and the bacon-spinach mix, and top with the remaining bread. Pour the egg mix over everything.
  7. Seal the bag and gently massage to evenly mix the ingredients. Place bag in the refrigerator and refrigerate overnight.
  8. Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius). Spray a 8-inch springform pan with nonstick spray.
  9. Pour the bread mixture into the pan. Top with the remaining ½ cup cheese.
  10. Bake for 45 minutes, until golden brown and bubbly on top.
  11. Allow to rest for 5 minutes before removing from the pan and serving.
