This complete breakfast takes less than 15 minutes to make once your oven has heated up. You can get creative with this recipe as well and add any veggies that you want; just sprinkle them on top of the eggs before baking. Also, if you don’t eat or enjoy ham or prosciutto, this works wonderfully with thinly sliced turkey as well! Prosciutto is my favorite of all the options as it tastes like indulgence and is the perfect halfway meeting between ham and bacon.

All-in-One Breakfast Cups

For 4 people:

8 slices prosciutto, ham, or turkey

4 eggs

salt and pepper to taste

green onions, optional

  1. Preheat oven to 400°. (I do this while making the morning coffee.)
  2. Spray a muffin tin with non stick spray or rub with oil.
  3. Press two slices of prosciutto into the cup and make sure to cover the bottom and sides of the cup so there are no holes that the eggs can leak out of.
  4. Crack an egg into each prepared cup, salt and pepper them, and bake for 10-12 minutes or until the whites are opaque. Serve immediately.
