Fresh scallions are a great touch to add to many dishes, but scallions that have been sitting in the fridge for a while don’t do anyone any good. Here are some ideas for making use of scallions before they go bad:
- Make a 4-ingredient scallion ginger sauce that you can drizzle on eggs, chicken and fish.
- Instead of using regular onions in things like tomato salsa and guacamole, substitute in scallions.
- Use them to add some zing to a great macaroni salad.
- Save them to use in the weeks to come. Just wash and dry them, then chop them into green onion bits. Seal up the pieces tightly in a clean glass jar and place in the freezer until you’re ready to use them.
