Fresh scallions are a great touch to add to many dishes, but scallions that have been sitting in the fridge for a while don’t do anyone any good. Here are some ideas for making use of scallions before they go bad:

  1. Make a 4-ingredient scallion ginger sauce that you can drizzle on eggs, chicken and fish.
  2. Instead of using regular onions in things like tomato salsa and guacamole, substitute in scallions.
  3. Use them to add some zing to a great macaroni salad.
  4. Save them to use in the weeks to come. Just wash and dry them, then chop them into green onion bits. Seal up the pieces tightly in a clean glass jar and place in the freezer until you’re ready to use them.
