When the seasons change, so do our diets, so why should brunch be any different? The next time you have a morning gathering, don’t turn to the same old heavy waffles, bacon and eggs. Instead, check out these recipes from The Domestic Geek! They’re light, delicious and best of all, they can all be prepped the night before for an even easier morning.
You’ll Need:
Jam Butter
– 1 stick butter
– 2 tablespoons jam
Citrus with Pomegranate and Mint
– 1 blood orange
– 1 large grapefruit
– 2 oranges
– 1/4 cup pomegranate seeds
– Fresh mint
Mixed Greens With Honey Lime Vinaigrette
Salad
– 6 to 8 cups mixed greens
– 1 cup strawberries, sliced
– 1 large orange, cut into segments
– 1/4 cup slivered almonds
Dressing
– 1/4 cup freshly squeezed lime juice
– 2 tablespoons olive oil
– 2 tablespoons honey
– Salt and pepper
Ham and Swiss Strata
– 1 tablespoon butter or oil
– 1 loaf crusty bread, cut into 1 inch cubes
– 8 slices deli ham, chopped
– 3 to 4 green onions, finely chopped
– 12o ouncces Gruyere cheese, grated
– 12 eggs
– 1/2 cup milk
– 1/2 cup cream
– Salt and pepper
Yogurt Parfaits
– 1/2 vanilla Greek yogurt
– 1 tablespoon jam
– 1/4 cup granola
How To:
Jam Butter
Whip the butter and the jam together until smooth.
Citrus with Pomegranate and Mint
- Carefully peel and slice the citrus fruits.
- Arrange the sliced fruits in a single layer on a plate.
- Top the fruit with pomegranate seeds and fresh mint leaves.
Mixed Greens With Honey Lime Vinaigrette
- Mix the greens together in a large bowl.
- Top with the strawberries, oranges and almonds.
- In a small bowl, whisk together the lime juice, olive oil, honey, salt and pepper to make the honey lime vinaigrette.
- Dress the salad just before serving.
Ham and Swiss Strata
- Preheat your oven to 350 degrees Fahrenheit. Grease a large baking dish or two small baking dishes with butter or oil.
- Layer the bread, ham, green onion and cheese. Repeat if you have enough space in your baking dish.
- In a large bowl, whisk the eggs together with the milk, cream, salt and pepper.
- Pour the egg mixture evenly over the dish.
- Top with the remaining cheese.
- Refrigerate for at least an hour or, ideally, overnight.
- Bake for 1 hour. If cheese starts to get too golden, cover dish with foil.
Yogurt Parfaits
Layer the yogurt, jam and granola in jars.
