- 5 cups milk
- 1 lb. dried macaroni
- 2 cups cheese
You might notice in the video below that he begins by boiling the instructed five cups of milk. Then the pound of pasta is cooked IN said boiling milk…not exactly how we’re used to making pasta, right?
Well, consider this a major time saver and a means of making your mac and cheese extra yummy. You can skip a step if you cook your dry macaroni in milk rather than in water first, but you’re also capturing the starch that releases from pasta when it’s boiled; this starch is going to help thicken your milk (which is the base of your cheese sauce) and make your mac super creamy.
Now, the One Pot Chef uses a super special type of cheese in this recipe: Red Leicester cheese, which is a super sharp, strong cheddar. You don’t HAVE to use this variety, but cheddar cheese is definitely preferably for a full-flavor mac and cheese.
