This year, St. Patrick’s Day falls on a Friday, which means most of us will spend the day balancing celebrating with everyday work and school. If you don’t have extra time to spend over the stove, does that mean you should give up on making a special Ireland-inspired meal? Of course not— especially when you’ve got your slow cooker to help you out! Mom.me recently put together a list of crock-pot meals perfect for St. Patrick’s Day, and it inspired us to see if we could find some too! Here’s what we cooked up, so read on and pick out your favorite to give a try!

  1. Lazy Crock-Pot Golumpkis

What’s a “golumpki,” you ask? A delicious cabbage roll wrapped around a perfectly-cooked-and-seasoned meat filling! Not only is it delicious, it’s a perfect way to enjoy the classic beef-and-cabbage combo in a new and exciting way, because after all . . .

  2. Corned Beef and Cabbage

. . . it’s just not St. Patrick’s Day without this traditional meal. This year, make it the easiest way possible by popping it into your slow cooker!

  3. Irish Beef Stew

Corned beef might get all of the attention, but traditional Irish beef stew deserves some love, too! This one is as savory and filling as it’s possible to get, with some parsnips for a surprising touch of sweet.

  4. Steak and Guinness Pot Pie

Add some puff pastry in with the beef, Guinness, and veggies, and you’ve got an entire meal the easiest way possible.

  5. Slow Cooker Beef Stew

Want to go even simpler? Make a batch of this basic beef stew that’s still absolutely packed with flavor and will take you back to Sunday dinners at Mom’s house.

  6. Irish White Bean and Cabbage Stew

It can be hard to get in on the St. Patrick’s Day food action when everything’s meat-heavy and you’re vegetarian, but fear not! This white bean and cabbage stew is a delicious vegan alternative.

  7. Irish Tacos

This dish is not authentic at all. What it IS? Delicious and FUN!

  8. Overnight Oatmeal with Cranberries and Figs

You don’t have to save your slow cooker or your Irish influence for dinner! This overnight oatmeal lets you wake up to something sweet, warm, and St. Patrick’s Day-perfect!

  9. Dublin Coddle

What’s a Dublin Coddle? When Irish wives wanted to make a dish for their husbands but also wanted to go to sleep before those husbands got home from the pub, they left this stew on the stove! It was so gently and slowly cooked, it was like the delicious combination of bacon, sausage and veggies was “coddled.”

  10. Cheesy Potato Soup

For a lot of us, St. Patrick’s Day happens while winter’s still roaring. What could be better to counteract the cold than this hearty, filling potato soup?

  11. Leg of Lamb with Garlic, Lemon and Rosemary

Yes, this leg of lamb is made in the slow-cooker! Inspired by traditional Irish flavors and given a delicious twist, this slow-cooked lamb becomes fall-off-the-bone tender.

  12. Irish Lamb Stew

Prefer your lamb more traditional for St. Patrick’s Day? Try this hearty and tasty stew!

  13. Guinness Beef Stew

Take inspiration from one of Ireland’s most popular exports and make this savory stew with a sauce made of the most popular beverage.

  14. Corned Beef and Cabbage with Dijon Stout Gravy

We couldn’t resist showing you another way to make corned beef and cabbage, especially when this one has that zesty and tasty Dijon stout gravy twist!

  15. Bacon and Cheese Potatoes

Sometimes the simplest is the best! Everybody will love these cheesy potatoes and bacon, making them the perfect side or easy make-ahead brunch dish.
