Zucchini Pizzas

Two things we’re loving right now more than any other: making pizza with all kinds of alternative crusts, and finding new ways to enjoy all that summer zucchini! So of course, we had to find a way to put the two together, and the answer is brilliantly obvious: Zucchini Pizzas! These little pizzas are totally easy to make; so much so, in fact, that we think they’re actually easier than a regular pizza. And the fact that it’s much lower in carbs doesn’t hurt, now does it? Instead of bread, you get an extra dose of vegetable power! Check it out, and see if it doesn’t turn into your favorite weeknight, family-friendly dinner.

ZUCCHINI PIZZAS

INGREDIENTS

  • 1 zucchini
  • Olive oil, for brushing
  • Pizza sauce
  • Mozzarella, shredded
  • Mini pepperoni

DIRECTIONS

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Slice the zucchini into discs. Place them on a baking sheet and brush with olive oil.
  3. Spoon the pizza sauce onto the zucchini slices. Top with the mozzarella and mini pepperoni.
  4. Bake for 12 to 18 minutes, until the cheese has melted and the edges are slightly brown.
