She Drops Dough Into Oil to Make a Fried Dough Treat Like You’ve Never Seen Before

I know that most people make their resolutions on January 1, but for me, the start of fall has always signaled the time to make some changes and start anew. One thing I’m doing this year— trying new foods! That’s why I’m so excited by this recipe from Make Food Eat Food, who shows us how to make a Chinese-American treat called a Sugar Egg Puff. You’ll Need

– 1/2 cup water
– 1 tablespoon unsalted butter
– 1 tablespoon sugar
– 1/2 cup all-purpose flour
– 2 eggs, room temperature
– Vegetable oil for frying
– Extra sugar for coating

How To

  1. Combine the water, sugar and butter in a saucepan over medium high-heat. When the starts to bubble, turn off the heat and stir in the flour. Continue stirring until a loose ball has formed.
  2. Remove the dough from the heat and slowly add the eggs a third at a time. Thoroughly beat the eggs to incorporate it into the dough. As the batter comes together, it should be thick and shiny.
  3. Heat about 2 inches of vegetable oil in a heavy pot to about 325 degrees Fahrenheit.
  4. Carefully drop spoonfuls of batter into the oil. Be careful not to overcrowd, as the dough balls will expand significantly. You can experiment and adjust how much batter you add based on your preferences and the size of your pot.
  5. Fry the dough balls for 8 to 10 minutes (depending on size) until cooked through, golden-brown and crispy. Make sure to turn these over frequently so they don’t burn.
  6. Remove the egg puffs and let them cool slightly on a paper-towel-lined wire rack.
  7. When they are cool enough to touch, coat these puffs in sugar and serve while they are still warm.
