Slow Cooker Balsamic Chicken

I love slow cooker recipes as much as the next person, but how often is that that these recipes, while delicious, lack a certain amount of finesse? How often have you planned a dinner party and your oven is full, your stove is in use, and it would be just so helpful to have another appliance that could whip up something that was not only delicious, but impressive as well? Maybe you’re not throwing a party but you still want to come home to a visually impressive and stunningly delicious dinner after a long hard day at work. Well then this slow cooker balsamic chicken is the recipe for you. The crock pot does all the work, you just come home, put it on a plate and sprinkle a couple of garnishes on, and presto: a gorgeous satisfying dish is ready in mere minutes.

Slow Cooker Balsamic Chicken

4-6 bone in skin on chicken thighs

3/4 cup chicken broth

1/2 cup balsamic vinegar

1 medium yellow onion, halved and sliced

3-5 cloves garlic, depending on personal taste, crushed

1 teaspoon dried rosemary

1/2 teaspoon red pepper flakes

to garnish:

balsamic glaze to taste (either store bought or made my simmering 1 cup of balsamic vinegar on the stove for 10 minutes on medium low heat.)

small bunch fresh basil, sliced thin

  1. Place all of the ingredients except for the garnishes in the crock pot. Cook on low for 8 hours or high for 4-5.
  2. Serve drizzled with balsamic glaze and topped with sliced basil.
