Satisfy All Tastes with Sweet Potato Sliders

The next time you’re looking for an appetizer guaranteed to both please everybody and stand out from the crowd, try these Sweet Potato Sliders from Lexi’s Clean Kitchen! This easy-to-make recipe combines the healthy punch of sweet potatoes with the loaded-up taste of the tiny sandwiches everybody loves, all in a gluten-free package. Read on to find out how to make them and how to make vegetarian and dairy-free versions.

Ingredients:

– 1 large sweet potato
– 1 tablespoon avocado oil or extra-virgin olive oil
– 1/3-1/2 cup guacamole
– 1/4 cup salsa
– 1/4 cup scallions, chopped
– 1 cup pulled chicken, ground beef, or pulled pork
– Grass-fed cheddar cheese (optional)

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper or a baking liner.
  2. Slice your sweet potatoes. You can decide what width you prefer; just make sure they’re thick enough to hold your toppings!
  3. Toss the sweet potatoes with the avocado/olive oil.
  4. Place the sliced sweet potatoes on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
  5. Remove the potatoes from the oven. Top with the shredded chicken, ground beef, or pulled pork and – if you’re using it – cheese.
  6. Place the topped potatoes back in the oven for an additional 5 minutes.
  7. Turn the broiler on high for 1 to 2 minutes to really get the cheese nice and melted.
  8. Top with the guacamole, salsa and/or scallions and serve.

One of the best things about this recipe is how easy it is to adapt to your dietary needs! In addition to leaving the cheese off for a dairy-free version, you can also substitute the meat with refried black beans for vegetarian diets.
