Perfectly Light and Bright Rainbow Cookie Parfaits

You’ll Need:

– 1/3 cup shortening
– 1/3 cup butter
– 3/4 cup white sugar
– 1 egg
– 1 teaspoon vanilla
– 3/4 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– Food coloring
– Sprinkles
– Sweetened whipped cream or Cool Whip topping

How To:

  1. Preheat your oven to 350 degrees Fahrenheit. Line a muffin tin with muffin liners.
  2. Cream together the shortening, butter, sugar, egg and vanilla until light and fluffy.
  3. Blend in the baking powder and salt.
  4. Gradually blend in the flour until fully combined. Bring together into a ball of soft dough.
  5. Divide into six portions and tint each portion with food color.
  6. Using a cookie scoop or other spoon, place portions of the dough into muffin tins lined with muffin liners.
  7. Bake for 15 minutes, until the edges are light brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool completely.
  9. Crumble the cookies into a bowl, one for each color.
  10. Alternate layers of the cookie crumbs and whipped cream in clear cups or containers. Use an icing bag to pipe in the whipped cream.
  11. End with a cream layer and decorate with sprinkles if desired.
  12. Refrigerate until serving time.
