Two things we never get tired of: easy, one-pot meals, and our go-to combo of honey and soy sauce. (You’ve probably noticed that we’ve been drizzling it all over everything from shrimp to pork roast.) This amazing chicken and rice bake is both of those things — which is why we think it’ll become a family favorite for you, too.
This time we’re using honey and soy sauce as a savory marinade for chicken thighs, with a little sesame oil and rice vinegar to round out the flavors. The chicken starts off with a quick sizzle on the stovetop — super quick, because that delicious honey in the marinade will caramelize fast.
The next step is where the magic of this recipe happens: all you have to do is pour in some uncooked rice and chicken stock, and add a few Asian-inspired flavors like garlic, ginger, and green onion. Then bake the whole thing in the oven and you’ll end up with juicy, fork-tender chicken and some of the most flavorful rice we’ve ever tasted — in under an hour. That’s all it takes for a complete meal, so you don’t even have to think of any other side dishes or dirty any other pots.
