Warm weather foods are some of our favorite staples of all time; burgers off the grill, potato salad with bits of chives or bacon, and a true classic, pasta salad. Pasta salad is just one of those dishes that immediately makes you think of picnics in the park or backyard barbecues, which is just part of its undeniable charm.
The other part? How downright delicious it is!
But, let’s face it, even classic dishes like pasta salad can start to feel a little overdone. There’s no need to archive it with your outdated recipes, it’s just a matter of giving the staple a fresh new spin.
That’s exactly what the One Pot Chef decided to do with his newest recipe: a creamy pasta salad with a dressing that will make every pasta-lovers dream come true. Here’s what you’ll need to get started on this delicious recipe:
Creamy Pasta Salad
- 14 oz. pasta
- 1 cup diced bacon
- 2/3 cup of garlic aioli
- 1/3 cup sour cream
- 2 small carrots
- 2 cans sweet corn
- 4 spring onions
- Salt and pepper (to taste)
In this recipe, pasta shells are used. However, you’re welcome to use penne, or whatever small pasta you prefer.
Likewise, what you combine with the pasta is completely up to you! The One Pot Chef mentions that ham would taste just as fantastic as bacon and that there are plenty of vegetarian options to opt for instead. His suggestions, like mushrooms and red bell peppers, sound just as tasty as bacon!
And how simple is this recipe? You only need seven easy ingredients, only two of which need to be cooked, and you end up with a colorful dish that is just bursting with flavor! You’ll be hard pressed to find a side dish that looks as amazing as it tastes, like this one.
But the most impressive part of this dish is undoubtedly the dressing. Garlic aioli is one of our all-time favorite toppings/condiments, so using it as a base to create this creamy, mouthwatering salad is just brilliant. It’s simple to make and your friends or family will swear it’s a store-bought dressing!
