How to Make a No-Bake Lemon Pudding Ice Box Cake

This may be an unpopular opinion, but lemon might be my absolute favorite flavor – for most things. Especially when it comes to sweets and desserts. Yes, that means I like the yellow Starburst and yellow Skittles best.I know, I know, what’s the matter with me.

If you’re on the same page – or even if you just like lemony flavors without having such an unpopular candy preference – then you’re going to flip for this spin on ice box cake from Greater Good.

Anyone who’s familiar with ice box cake will tell you that this dessert tends to skew towards chocolaty flavors; s’mores, chocolate and peanut butter, brownie, Oreo, ect. Granted, you might see a birthday cake or toffee variation, but those aren’t the typical flavors you’ll come across.

So, needless to say, this lemon pudding ice box cake is a seriously fresh twist on this favorite dessert!

One way this recipe stays true to classic ice box cake is in its structure. You’ll usually see ice box cakes that are layered with some kind of a custard, ice cream or otherwise and graham crackers. Then everything is topped off with some kind of whipped frosting. (It’s making me hungry just thinking about it!)

This lemon cake has that same structure, but the sweet and sour flavor of the filling is a new take on this treat that we can’t wait to try! Here’s what you’ll need to get started:

Lemon Pudding Ice Box Cake

Ingredients

  • 8 oz. of Cool Whip
  • 3 cups of milk (for lemon base)
  • 2 packs of lemon pudding mix
  • 1 16 oz. package of graham crackers
  • 1/2 cup of butter
  • 2 tbsp. of milk (for topping)
  • 2 tbsp. of lemon juice
  • 1 cup of powdered sugar

Like most ice box cakes, one of the best parts about this dessert is that it’s no-bake. All you have to do is pop the container in the freezer for the dictated amount of time and – voila! You have a layered cake that looks as incredible as it tastes.

To really take this dessert to the next level, we would try adding a whipped blueberry frosting on top. Lemon and blueberry create an undeniable yet unique flavor combination you can’t turn down! Even adding some lemon zest on top of the frosting out be an elegant and delicious touch.
