Homemade Stuffed Peppers With a Halloween Flair

When you hear the term “jack-o-lantern,” you automatically think pumpkin, right? That’s understandable, but if we just think creatively, there are actually tons of ways for other fruits and veggies to get in on the act and add some Halloween flair to our dishes. Kin Community is here to show us one of the most clever and most delicious takes on this idea: Jack-O-Lantern Stuffed Peppers! You’ll Need

– 4 to 6 orange bell peppers
– 1 pound browned lean ground beef
– 1 small diced onion
– 2 cups seasoned croutons
– 1 can diced, seasoned tomatoes
– 2 diced garlic cloves
– 1/4 cup mustard
– 1 egg
– 1/4 teaspoon salt
– 1/4 teaspoon pepper
– Shredded cheese

How To

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Using a paring knife, slice an opening into the top of an orange bell pepper, cutting a circle around the stem. Remove the lid and slice off the seeds.
  3. Remove the seeds from the inside of pepper.
  4. Cut a jack-o-lantern face in the side of the pepper. Set aside for a moment.
  5. Combine the rest of te ingredients in a large bowl.
  6. Place the peppers in a baking dish and spoon the mixture into the peppers. Top with shredded cheese and reposition the pepper tops.
  7. Bake for 45 minutes to 1 hour.
