How to Prepare, Steam and Eat and the Illusive Artichoke

Artichokes are one of the tastiest spring vegetables out there, but they are also one of the most intimidating veggies to a lot of people as well. Just a couple of years ago, I had no idea how to eat an artichoke, let alone know how to prepare it or cook it. Now that the secrets of artichokes have been revealed to me however, I love to enjoy steamed artichoke as a snack any day. To recap, here are some things you want to look for when you pick out artichokes:

  • Look for artichokes that have a tight head (the leaves are very much closed in).
  • Make sure you pick artichokes that are a vibrant green color.
  • If you want to eat raw artichoke, choose baby artichokes.
