He Puts His Leftover Apple Cores in a Jar. How He Uses Them is Really Clever.

Fall is almost here, and you know what that means: apples everywhere! One of my favorite things to do is go apple picking, grab as many apples as I can carry, and then spend the weeks afterward figuring out all the best apple recipes and ways to use them. I find a lot of variety, but one thing is constant: I’ve never used the cores. That’s always bothered me a little – who likes waste?! – but I figured there wasn’t anything to be done about it. Not anymore! Southern Living has a clever idea for a way to use those cores and extract every last bit of apple taste. Their solution? Homemade apple vinegar. Watch how it’s done.

So did you catch all those steps? Just in case:

  1. Place your apple cores in a mason jar.
  2. Bring a mixture of white vinegar, salt and sugar to a boil.
  3. Pour the boiled mixture into the mason jar over the apple cores.
  4. Add some fresh thyme.
  5. Allow to cool completely.
  6. Put on the lid and refrigerate for up to one month.

Easy! I love that not one bit of the apple will go to waste this way, and I’m definitely going to try it in some autumnal cocktails! What about you?
