Grill Up Some Cheesy Buffalo Bacon Fries

There are very few comfort foods that match the power of cheesy fries. Once in a while, it’s such a treat to be able to enjoy all of that cheesy, warm goodness. But when we saw this grilled take on cheesy fries courtesy of Tablespoon, we knew it was time to fire up the grill and give them a try. How perfect would these be as a side dish to burgers and dogs?

Here’s What You Need:

1 bag (14 oz.) crinkle-cut French fries
3 tbsp melted butter, divided
1 cup buffalo sauce
4 oz. sharp cheddar cheese, shredded
4 oz. bleu cheese, crumbled (or more, if desired)
2 green onions, chopped
4 slices thick cut bacon, cooked and crumbled
Fresh cilantro, for serving
4 (6-inch) lengths heavy-duty aluminum foil

Here’s What You Do:

  1. Heat your grill to medium-high heat.
  2. Put frozen French fries into a large bowl and toss with 1 tbsp of melted butter.
  3. Place 1/4 of the fries in a single layer in the center of a piece of foil. Loosely fold the foil around the edges. Just make sure to leave a large hole at the top so that steam can escape. Repeat this with the other pieces of foil and remaining fries, then place the foil packets onto the hot grill.
  4. Cover the grill and cook fries for 20-30 minutes, stirring once, until fries are cooked through and crispy on the outside.
  5. While fries are cooking, mix together the buffalo sauce with remaining 2 tbsp of butter.
  6. Sprinkle each packet evenly with the bleu cheese and cheddar cheese.
  7. Cover the grill again and cook fries for another 2-3 minutes, or until all of the cheese melts.
  8. Remove packets from grill and top with crumbled bacon and sliced green onion. Garnish with cilantro if desired and devour!
