Flowering Onions

When I first saw the flowering onion trick I thought there was no way it would turn out like a flower. It looked a little too easy to create something so beautiful. So I made the cuts and covered generously with olive oil and balsamic and seasoned with salt and pepper. When I finally pulled it out of the oven and took off the aluminum foil I literally gasped for the first time in my culinary career. Ingredients

– 1 Red Onion (recommend a medium onion)
– Olive Oil
– Balsamic Vinegar
– Salt & Pepper

Instructions

– Preheat oven to 425

– Cut the red onion first into quarters and then into eighths. Do not cut all the way through the onion, maybe 4/5 ths of the way so the petals stay attached. Make sure the onion is root side down. You may want to cut a bit off the root side to make it flat and easier to cut.

– Pour a healthy amount of olive oil and balsamic vinegar over the onion and in between the cuts.

– Season with Salt & Pepper. You can also add any herbs or seasoning you want such as rosemary or maybe a smoky salt.

– Place onions into a baking pan or dish that’s oven safe up to 425. Cover with aluminum foil and bake for 20 minutes.

– Take aluminum foil off and roast for an additional 10 minutes.

Pull it out of the onion and it should look like a beautiful rose. Some of the petals may come off but you can easily put them back on. This is my favorite way to eat onion and you can simply pull apart the petals to eat.
