GREEK GRILLED EGGPLANT

INGREDIENTS

  • Eggplant


  • Olive oil

  • Salt

  • Pepper

  • Chili powder

  • Cucumbers

  • Feta

  • Tomatoes

  • Chopped parsley

  • Lemon juice
  • DIRECTIONS

    1. Slice a thick piece of eggplant.
    2. Coat the eggplant in olive oil, salt, pepper, and chili powder.
    3. Grill the eggplant for four minutes on each side. You should see nice lines and the eggplant should be tender.
    4. Top your eggplant with diced tomatoes and cucumbers, feta, parsley, and lemon juice.
