Here’s an Easy Way to Make Roast Chicken for Dinner

If you want a traditional, no-fail dinner, the roast chicken is your best bet. While this chicken can act as a blank canvas for any flavors your heart desires, just the flavor of a good roast chicken on its own is amazing. Best of all, this is a lean meat, which means you’re serving up a healthy AND delicious dinner. It doesn’t take too much time, ingredients, or culinary expertise to roast a chicken, either. You can attempt this chicken two ways: you can let the chicken sit at room temperature for a hour before adding your rub and cooking OR you can put the rub on and let the chicken refrigerate overnight to soak in the spices a bit more. Totally up to you.

ROAST CHICKEN

INGREDIENTS
– Whole chicken

Rub:
– Salt and pepper
– Lemon zest
– Fresh thyme
– Rosemary
– Sumac
– Olive oil
– Water

Salad Dressing:
– Shallots
– Fresh tarragon
– Mustard
– Salt and pepper
– Olive oil

DIRECTIONS

1. To make the vinaigrette for your side salad, combine shallots, tarragon, mustard, salt, and pepper in a separate bowl.
2. To make the rub, combine lemon zest, thyme, rosemary, sumac, salt, pepper, and olive oil in another bowl. Stir to combine.
3. Massage the rub into the chicken, then cover all sides of the chicken with salt and pepper.
4. Pour in some water into the dish, under the chicken. Your chicken should be raised out of the dish on a small rack for this purpose.
5. Put the chicken in a 375 F. oven.
6. When the chicken is golden brown and finished, stick a thermometer into the thigh of the chicken. When it hits 155 F., it is perfectly cooked.
7. Pour the juices from the bottom of the pan into the salad dressing.
8. Break up your chicken to serve and toss the salad for your side.
