Cheesy Bacon Potato Bites Too Good Not to Share

Whether you’re lunching, brunching, throwing a party, or just looking to pack as many of your favorite foods into one dish, you can’t go wrong with these Cheesy Bacon Potato Bites from Sprinkle Some Sunshine. They’re the ultimate in easy-to-make comfort food, and while you won’t be winning any dieting awards, you’ll be too satisfied to care.

Ingredients:

– 2 pounds potatoes
– 6 slices of bacon, cooked, drained & chopped. Reserve 1 tablespoon of bacon grease.
– 2 cups medium cheddar cheese, shredded
– 4 green onions, chopped
– Salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees Fahrenheit. Prep a cookie sheet by brushing it very lightly with the reserved bacon grease, or by simply spraying it with cooking spray.
  2. Wash the potatoes and slice them into wedges between 1/4 and 1/8 inch thick, depending on your preference.
  3. Place the potato slices in a large pot, cover with water and cook until the water boils. Boil for about 5 minutes or less, depending on the thickness of your potatoes. They should be firm and should not be cooked through.
  4. Carefully drain the potatoes and arrange them on the prepared cookie sheet, slightly overlapping, “shingle style.”
  5. Lightly brush the potatoes with the reserved bacon grease. If you prefer, you can use vegetable oil or olive oil instead.
  6. Sprinkle with shredded cheese and chopped bacon, then salt and pepper to taste.
  7. Bake for 15 minutes, until the potatoes are cooked through. For a little extra crunch, you can place them under the broiler for 2 minutes after baking.
  8. Top with chopped green onions and enjoy!
