It’s said that breakfast is the most important meal of the day, and while I know some people who skip breakfast without suffering any consequences, I would argue that breakfast food is the most delicious of any meal of the day. From omelets and breakfast casseroles to french toast and pancakes, it’s really hard to beat breakfast food. That’s why breakfast for dinner is a thing in my house.

Many busy weekdays, there just isn’t enough time to prepare a made-from-scratch breakfast in the morning. That’s why I often make something ahead of time (like muffins) that we can quickly grab as we’re heading out the door for work and school, but Saturday is different.

Almost every Saturday morning in my house is a lazy Saturday morning when we enjoy a delicious brunch as a family. Many Saturdays, we eat pancakes, but we like to switch things up and try new recipes. No ordinary pancakes for us.

Another great thing about pancakes is that they’re easy to reheat. You know how I mentioned that I often have something prepared ahead of time for busy weekday mornings? Sometimes that means I make extra pancakes on Saturday morning so we can stick them in the microwave for a few seconds on a weekday and pretend for a bit that it’s a lazy Saturday morning…that is, until everyone scatters off to work and school.
