30-Minute Lemon Butter Chicken Breasts

Here’s what you need:

-6 medium boneless skinless chicken breast halves
-1/2 cup all-purpose flour
-1/2 teaspoon salt
-2 teaspoons lemon pepper seasoning
-1/3 cup butter
-2 lemons, sliced
-2 tablespoons lemon juice
-Hot cooked rice or pilaf (optional)

Here’s what you do:

  1. Put each chicken breast half between two pieces of plastic wrap, then pound lightly into rectangles (1/4″ to 1/8″ thick).Remove plastic wrap.
  2. Combine flour and salt in a shallow bowl.
  3. Coat chicken breasts with flour mixture, then sprinkle with lemon pepper.
  4. Heat butter in a 12″ skillet. Then cook the chicken, half at a time, over medium high heat for 3 minutes on each side, until brown with no pink. Remove chicken from skillet.
  5. Add lemon slices to skillet and cook for 2-3 minutes, turning once, until lightly browned.
  6. Return all chicken to skillet, overlapping breasts slightly. Drizzle lemon juice over the chicken and cook for 2-3 more minutes. Pan juices should be slightly reduced.
  7. Serve chicken, lemon slices and pan juices over rice if desired.
