You’ll Need

Cajun Frittatas
– 1 pound spicy sausage, removed from casing
– 1/2 red onion, finely diced
– 1 red bell pepper, finely diced
– 1 green bell pepper, finely diced
– 2 celery stalks, finely diced
– 2 cloves garlic
– 2 teaspoons Cajun seasoning
– Salt and pepper
– 8 eggs
– 1/2 cup milk or cream
Turkey Quinoa Meatloaf Muffins
– 1/4 cup red onion, grated
– 2 carrots, grated
– 2 celery stalks, finely chopped
– 1 red bell pepper, finely chopped
– 1 pound ground turkey
– 1 cup cooked quinoa
– 1 egg
– 1/4 cup BBQ sauce
– 1/2 teaspoon Worcestershire sauce
– Salt and pepper
– 1/4 cup BBQ sauce for glazing
Mac & Cheese Cups
– 1 pound brown rice macaroni, cooked and drained
– 2 1/2 cups butternut squash, cubed
– 1 cup chicken or vegetable broth
– 1 cup milk
– 1 clove garlic, minced
– 3 tablespoons plain Greek yogurt
– 1 cup Gruyere OR sharp cheddar cheese, grated
– 1/2 cup Parmesan, freshly grated
– 1 teaspoon smoked paprika
– Salt and pepper
